These are amazing for a ketogenic or paleo diet! They are yummy too!
You need (per person):
1 aubergine thickly sliced in circles
tomato puree or sliced fresh tomato
olive oil or softened coconut oil
plenty of black and white sesame seeds
toppings:
grated cheese
grated mozzerella
pepperoni slices
thin slices of mushroom, peppers
olives
italian herbs / crushed chilli / garlic etc
Method:
Base:
- Grease a baking tray
- brush oil onto an aubergine slice and dip into mixed sesame seeds
- place on the baking tray
Toppings:
- add tomato puree or sliced tomato
- add a variety of toppings
- top off with cheese and mixed herbs (I use parsley, basil and oregano)
Bake in a moderate to hot oven (about Gas mark 6) for about 15mins
Serve as a finger food (they can be a bit juicy!) or with a salad!
