These are amazing for a ketogenic or paleo diet! They are yummy too!

You need (per person):

1 aubergine thickly sliced in circles

tomato puree or sliced fresh tomato

olive oil or softened coconut oil

plenty of black and white sesame seeds

toppings:

grated cheese

grated mozzerella

pepperoni slices

thin slices of mushroom, peppers

olives

italian herbs / crushed chilli / garlic etc

 

Method:

Base:

  1. Grease a baking tray
  2. brush oil onto an aubergine slice and dip into mixed sesame seeds
  3. place on the baking tray

Toppings:

  1. add tomato puree or sliced tomato
  2. add a variety of toppings
  3. top off with cheese and mixed herbs (I use parsley, basil and oregano)

Bake in a moderate to hot oven (about Gas mark 6) for about 15mins

Serve as a finger food (they can be a bit juicy!) or with a salad!
